Mkate wa Sembe (Swahili Sponge Cake)
Have you ever heard of Mkate wa Sembe (Swahili words directly translating to bread of maize meal). This bread/cake is a delicious accompaniment for tea time. It is also known as Mkate wa Mayai or a Swahili Sponge Cake.

Ingredients
4 eggs
1 cup sugar
1 tbsp vanilla essence
1 tbsp baking powder
1 cup milk
1/2 cup oil
1 cup Unga wa Dola All purpose flour
1 cup Unga wa Dola Maize meal
Instructions
1
In a bowl, whisk together eggs, sugar, vanilla essence and baking powder for 5-8 minutes or until the fluffy.
This is a very important step so make sure you take the time to beat it until the mixture is pale, fluffy and thick.
2
Add the milk and oil and beat again for 1 minute.
3
Scoop in all purpose flour and maize meal and beat for another 1 minute or until the flour is well incorporated into the liquid mix.
4
Pour the batter into a greased loaf pan and bake in a preheated oven at 175C for 40-45 minutes. To check if it is ready, insert a skewer and if it comes out dry, it is ready.
5
Let cool in the pan for 10 minutes, then remove the cake and let cool completely. Slice and serve with some hot tea or coffee.
