Mkate wa Sembe (Swahili Sponge Cake)

Have you ever heard of Mkate wa Sembe (Swahili words directly translating to bread of maize meal). This bread/cake is a delicious accompaniment for tea time. It is also known as Mkate wa Mayai or a Swahili Sponge Cake.

Mkate-wa-sembe

Ingredients

4 eggs
1 cup sugar
1 tbsp vanilla essence
1 tbsp baking powder
1 cup milk
1/2 cup oil
1 cup Unga wa Dola All purpose flour
1 cup Unga wa Dola Maize meal

Instructions

In a bowl, whisk together eggs, sugar, vanilla essence and baking powder for 5-8 minutes or until the fluffy. This is a very important step so make sure you take the time to beat it until the mixture is pale, fluffy and thick.

Add the milk and oil and beat again for 1 minute.

Scoop in all purpose flour and maize meal and beat for another 1 minute or until the flour is well incorporated into the liquid mix.

Pour the batter into a greased loaf pan and bake in a preheated oven at 175C for 40-45 minutes. To check if it is ready, insert a skewer and if it comes out dry, it is ready.

Let cool in the pan for 10 minutes, then remove the cake and let cool completely. Slice and serve with some hot tea or coffee.
