Cajun Chicken

An old but favourite recipe! This Cajun Chicken, while not very authentic, celebrates the lovely flavours of the Cajun Cuisine. You can easily get Cajun spice in super markets nowadays, but I love to make my own combination at home. It’s just so easy to make. Serve this dish with steamed Basmati or Aromatic rice.



2 tbsp oil
1 medium onion, chopped
1 tsp garlic, minced
1 tsp green chili, chopped
1 chicken breast, chopped into 1 1/2 inch cubes
Salt to taste
1/2 cup red bell pepper, chopped
1 tsp dried mixed herbs
1 tsp thyme
1 tsp ground black pepper
1 tsp chili powder
1 tbsp paprika
1/2 can tomatoes, crushed


Heat oil in a skillet and add onion, garlic and green chilies and stir for 1-2 minutes or until the onions turn translucent.
Add the chicken cubes and toss for 3-4 minutes until the chicken turns from pink to white. Season with salt.
Add bell peppers, dried mixed herbs, thyme, black pepper, chili powder and paprika and stir until the spices have coated the chicken pieces nicely.
Mix in the tomatoes and let simmer for 6-8 minutes over a low flame. Garnish with coriander leaves and serve.
