No Bake Lemon Cheesecake

No Bake cheesecakes are so much more fun to make. This No Bake Lemon Cheesecake is a show stopper. It is so simple to make and so delicious. It has a layer of crushed biscuits, topped with a creamy cheesecake mixture and finally finished off with a tart lemon curd that gets its beautiful yellow colour from the egg yolks.



For the Lemon Curd:
1 egg
3 egg yolks
1/4 cup lemon juice
1 tbsp butter
Zest of 1 lemon
1/2 cup sugar
For the cheesecake filling:
3/4 cup whipping cream
1 cup cream cheese
1/4 cup caster sugar
For the base:
NuVita Lemon Tea Biscuits, crushed
2 tbsp melted butter


For the lemon curd: Add all the ingredients of the lemon curd into a pot and whisk until combined. Place over a medium flame and keep whisking for 4-6 minutes or until the mixture thickens.
Sieve the curd into a bowl to get rid of any lumps and cover with a cling film. Make sure the cling film touches the surface of the curd so it doesn't form a dry film over it as it cools. Let chill in the refrigerator for 30 minutes.
For the cheesecake filling: Whip the cream in a bowl for 3-5 minutes. Add the sugar and whip again until stiff peaks form. Lightly whisk in the cream cheese until combined.
For the base: Combine crushed biscuits with melted butter.
Bring the dish together: Place 2 tbsp of the biscuit mixture into the base of your dessert dish. Add 4 tbsp of the cheesecake mixture and finish it off with 2 tbsp of lemon curd. Garnish with crumbled biscuits and serve chilled.
