Digestive Snack Cake
Cake made with digestive biscuits? Trust me, this Digestive Snack Cake is light and delicious and the perfect snack to go with your afternoon/evening tea.
Ingredients
1/4 cup all purpose flour
3/4 tsp baking powder
1/4 tsp salt
6 tbsp butter, at room temperature
1/4 cup sugar
1 egg
1 egg yolk
1 cup NuVita Digestive Biscuits Crumbs
1/4 cup milk
1 tsp vanilla essence
Melted chocolate, for garnishing
Instructions

In a bowl mix together biscuit crumbs, flour, baking powder and salt.

In another bowl, using an electric mixer, beat butter and sugar until light and fluffy. Beat in the egg and egg yolk.

Add half of the dry ingredients and mix. Add milk and vanilla essence and mix again followed by the remaining dry ingredients until well combined.

Grease and layer a 9 inch cake pan with parchment paper and pour the batter into the pan. Flatten it out using a spatula.

Bake in a preheated oven at 175C for 35 minutes or until a skewer inserted comes out clean.

Cut the cake into 9 pieces and drizzle chocolate over the cake. You can also ice it with buttercream or whipping cream. Serve with a cup of tea.
