Chilli-Chicken-Wings

Ingredients

350 gms chicken wings, cut into the drumette and wingette, discard the tips)
3 tbsp dark soy sauce
1 chicken stock cube
Freshly ground black pepper
4 tbsp oil
1 tbsp ginger, finely chopped
1 tbsp garlic, finely chopped
1/2 tsp red chili flakes
1 cup red bell peppers, sliced
1 cup spring onions, chopped into 2 cm pieces
1/4 cup corn starch
1 tsp vinegar
1 tsp sugar
1 1/2 cups water
Served with steamed Daawat Aromatic Rice

Instructions

1
In a bowl, mix together chicken wingettes and drumettes with soy sauce, chicken stock cube and pepper. You can marinate for 30 mins to overnight.
2
In a heavy based pot, heat oil. Add ginger, garlic and chili flakes and toss for 30 seconds or until fragrant.
3
Add the chicken, bell peppers and spring onions and stir. Cover the pot with a lid and let cook for 25 minutes (stir every 5-8 minutes to prevent the wings from sticking, if it is too dry, you can add some water).
4
In another bowl, mix together corn starch, vinegar, sugar and water. Pour this mixture into the chicken and stir. Simmer for 3-5 minutes.
5
Serve with steamed Daawat Aromatic Rice and a garnish of spring onions.
