Avocado & Basil Linguine
In the last few years, we Kenyans have really started liking Avocado and eating it with almost every food we make. So this Avocado & Basil Linguine is a must! It’s so simple to make and although it may look boring, it is delicious! The basil leaves along with the avocado give the spaghetti a rich green colour and the cherry tomatoes just complete this dish.
Ingredients
1 avocado, skinned and sliced into half
A bunch of basil leaves
1 tsp garlic, chopped
Salt to taste
Freshly ground black pepper
1/4 cup olive oil
200 grams Daawat Linguine, cooked
1 cup cherry tomatoes, halved
1 cup sweet corn
Instructions

In a food processor, add avocado, basil leaves, garlic, salt and pepper and blitz until smooth.

Slowly pour olive oil 2-3 drops at a time while the processor is on and continue doing this until the mixture has emulsified.

In a bowl, toss the linguine, avocado and basil puree, cherry tomatoes and sweet corn.
