Sweetened Yoghurt Parfait (Shrikhand Parfait)
Shrikhand, also known as sweetened thick yoghurt is a quick dessert that is super creamy and tastes amazing when served chilled.
NuVita Shortbread biscuits, crushed
3 cups natural yoghurt
1 tbsp saffron infused in 3 tbsp milk
1/2 tsp cardamom powder
1/2 cup icing sugar
Chopped Pistachios, for garnishing
Layer a muslin cloth over a sieve and pour the natural yoghurt into it. Squeeze excess water out and place a heavy object over the muslin cloth for 1 hour+.
Transfer the yoghurt (once all the water has drained) from the muslin cloth and put it in a bowl. Add saffron milk, cardamom powder and icing sugar and whisk for 3-5 minutes or until light and fluffy.
In small wine glasses, layer crushed NuVita shortbread biscuits and top with some chopped pistachios. Layer the sweetened yoghurt on it and garnish with pistachios. Serve chilled.
