Spicy Mashed Matoke (Plantains)
Mashed potatoes are a common side dish with grilled chicken or a fish. Why not change it up a little and make this Spicy Mashed Plantains. So delicious!
Ingredients
4 plantains, peeled, sliced and sit in water to prevent browning
Juice of 1/2 lemon
2 cups boiling water
2 tbsp Canapure Canola Oil
1 onion, chopped
1 tsp garlic, minced
1/2 cup green bell pepper, chopped
1 tomato, chopped
1/4 cup coriander leaves, chopped
1/2 tsp coriander-cumin powder
1 tsp curry powder
Salt to taste
Freshly ground black pepper
2 cups stock
Instructions

In a bowl, place plantains, lemon juice and boiling water. Let sit until the water cools down.

In a pan, heat oil. Add onions, garlic and bell pepper and cook for 1-2 minutes or until the peppers soften.

Add the remaining ingredients and let simmer for 20-25 minutes. Mash the mixture and serve hot.
