Pork & Sweet Potato Rice

If you love pork and sweet potatoes, then you’re in luck. This sweet and savoury dish will take your taste buds for a ride. The sweet potatoes are roasted to soften the potatoes and bring out its sweetness along with a little char and the pork is nicely seared and seasoned. This is then reheated with some spinach and left over brown rice to create a whole meal perfect for lunch/dinner.

Ingredients

1 sweet potato, sliced lengthwise into chips shape
4 tbsp olive oil
2 pork chops
2 tsp cumin powder
1 bunch spinach, chopped
1 1/2 cups Daawat brown rice, cooked/leftover
2 tbsp soy sauce
Salt to taste
Freshly ground black pepper

Instructions

Onto a baking tray, spread the sweet potato chips. Drizzle 2 tbsp of olive oil and season with salt and pepper. Bake in an oven preheated at 180C for 20-25 minutes.

In a pan, heat 2 tbsp olive oil until smoking. Place the pork chops into the oil, season with cumin powder, salt and pepper on both sides and let cook for 3-4 minutes on each side.

Chop the sweet potato chips into bite sized portions along with the pork chops. Then add the pork chop pieces back into the same pan that you used to fry the pork along with the spinach, sweet potato, brown rice and soy sauce.
