Oats and Cashewnut Sandwich Barfi
I love Indian sweets and these are so easy to make at home. My oats and cashewnut barfi sandwiched in a layer of sweet coconut is the perfect dessert to end the evening.
For the Barfi:
1/4 cup NuVita whole grain porridge oats, ground
1/2 cup sugar
1/2 tsp cardamom powder
1/2 cup water
1 cup cashewnuts, ground
For the coconut layer:
1/4 cup sugar
1/4 cup water
1 cup dessicated coconut
Green color food coloring
In a heavy bottomed pot, add sugar, cardamom powder and water and stir for 5-6 minutes or until the syrup comes to a one string consistency. To test if it is at the right consistency, lightly dip your index finger in the syrup and press it with your thumb. Slowly pull your index finger and thumb away from each other and it should form one string.
Add the cashewnuts and oats and stir for 5-6 minutes or until it all comes together.
Brush a baking tray with oil and layer the mixture onto it. Press it down using a spatula. Chill for 10 minutes. Cut the slab into half and set one half aside.
In another pot, add sugar and water and boil for 2-3 minutes. Add the coconut and food coloring and mix together.
Add the coconut mixture onto the slab of the barfi that is on the baking tray and press down using a spatula. Place the other slab on top of it and press down. Chill for 10 minutes and then cut into small square pieces of your desired size and serve.
