
Oat and Chocolate Chip Muffins
The mornings are always so busy to make myself something for breakfast, so i’ve been resorting to muffins with my morning tea. These oat and chocolate chip muffins are my go to muffin recipe to satisfy the muffin cravings.. is that even a thing? Well, yes it is, for me!

Ingredients
1 cup NuVita porridge oats
1 cup milk
1 egg
1/4 cup melted butter
1/4 cup honey
1/2 tsp vanilla essence
1 1/4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 cup chocolate chips
Extra chocolate chips and oats for topping

In a bowl, mix together oats and milk and let sit for 20 minutes.

In another bowl, whisk together the egg, butter, honey and vanilla essence and set aside.

In a large bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. Add the soaked oats and whisk until combined.

Pour the egg mixture into the dry ingredients and use a spatula to mix it all together. Fold in the chocolate chips.

Line a cupcake tray with cupcake liners and use an ice cream scoop to fill the liners 3/4 way up. Top with some more chocolate chips and oats.

Bake in a preheated oven at 215C for 5 minutes and then reduce the heat to 175C and bake for another 11-13 minutes. Don't over bake or they will become dry.

Cool completely on a wire rack and serve.
