
No Bake Mango & Passion Fruit Cheesecake
Ever wanted to learn how to make a light cheese cake without having to go through the hassle of baking it or even one without gelatine? This recipe is all you will ever need for that perfect no bake cheesecake and requires only a handful of ingredients. I top my easy peasy cheese cake with some ripe mangoes and passion fruit to give it some tartness that balances out the sweetness so well, however, feel free to top it off with any other fruits you may like.

Ingredients
1 packet NuVita digestive biscuits, crushed
1/4 cup butter, melted
1/2 cup whipping cream
250 gms cream cheese, at room temperature
4 tbsp caster sugar
2 tbsp lemon juice
1 tsp vanilla essence
Chopped mango and passion fruit
Instructions

In a bowl, mix together crushed biscuits and melted butter. Layer the bottom of your serving cup or jar with the wet biscuit and press down lightly. Set aside.

In a large bowl whip the whipping cream until stiff peaks form.

In another bowl, whip the cream cheese, sugar, lemon juice and vanilla until fluffy.

Fold in the whipped cream a little at a time. Make sure not to over mix the mixture otherwise it will deflate and won't hold up its shape.

Pipe or scoop the cheesecake filling into the jars.

Top with the fruit and serve. You can chill it for 2 hours+ before serving.
