No-Bake Berry Cheesecake

No-bake berry cheesecake comes together in less than 10 minutes. This is my go to quick dessert for a quick sweet craving fix. The blueberry jam gives it a tart taste that goes perfectly well with the sweetness from the digestive biscuits. Top it off with a raspberry for that finishing touch.



1/2 cup ricotta cheese
2 tbsp blueberry jam
1 cup whipping cream, cold
2-3 tbsp caster sugar
Digestive Biscuits
Fresh raspberries, for garnish


In a blender, add the ricotta cheese and blueberry jam. Blend for 2-3 minutes until there are no lumps and the mixture becomes fluffy.
Place some ice in a large bowl and place another bowl on top of it. Pour in cold whipping cream and beat using a hand mixer. You can even beat the cream in your handy kitchen-aid. Make sure to chill the bowl of your kitchen-aid in the freezer. Beat the cream for 3-4 minutes or until soft peaks form.
Add caster sugar and beat again for another 1-2 minutes until stiff peaks form.
Fold the whipped cream into the blueberry-ricotta mixture. Place into a piping bag with your favorite decorating nozzle on. I used the star nozzle.
Pipe the cheesecake mixture onto each digestive biscuit and top with fresh raspberries.
Place in the refrigerator if not serving immediately until ready for dessert.
