Lemon Butter Fish on Parsley Rice
This lemon butter fish is a so easy to make and requires only a handful of ingredients, and the result is a flaky fried fish swimming in a pool of a buttery tangy sauce and served with a fragrant parsley rice.
Ingredients
For the Parsley rice:
1 cup Daawat Basmati Rice, soaked
1 tbsp oil
1 tbsp garlic
Salt to taste
2 cups water
1/4 cup parsley, chopped
For the lemon butter fish:
2 tbsp oil
3 tilapia fillets
Salt to taste
Freshly ground black pepper
Lemon slices
1 tbsp lemon juice
3 tbsp butter
1 tbsp parsley, chopped

For the rice: heat oil in a pan. Add garlic and saute for 30 seconds. Add the rice and salt and stir. Pour water, let come to a boil, lower the heat and then cover with a lid and let simmer for 12-15 minutes.

Once cooked, add parsley and fluff with a fork.

For the fish: Heat oil in a pan and add the tilapia fillets. Season with salt and pepper on both sides. (cook for 3 minutes on one side and then flip over and cook for another 2 minutes).

Lay the lemon slices over the fish, add the butter and lemon juice and once melted, use a spoon to pour the sauce over the fillets.

Garnish with parsley and serve with parsley rice.
