
Kidney Bean & Mushroom Burger
I can’t ever say no to a burger, especially when it has mushrooms, beans, halloumi cheese.. basically all the good stuff. Mine is the perfect substitute for a meaty burger and you may not believe it, but my husband who will choose meat over anything, actually said that he would take this kidney bean and mushroom burger over any burger ever.. That says it all!

Ingredients
2 tbsp oil
1 large onion, chopped
4 cloves of garlic, minced
4 cups mushrooms, sliced
Salt to taste
Freshly ground black pepper
1 cup kidney beans, canned
1/2 cup Daawat Brown Rice, cooked
1 tsp chili powder
1 tbsp paprika
1 tsp cumin powder
1 tbsp oil, for cooking
Extras:
Burger buns, sliced into half and toasted
Mayonnaise
Lettuce, shredded
Grilled halloumi cheese
Tomatoes, sliced
Instructions

Heat oil in a pan and add the onions. Once they turn translucent, add the garlic. Stir and then add the mushrooms, salt and pepper. Cook for 5 minutes or until all the moisture dries out.

Place the mixture in a bowl and add kidney beans, cooked brown rice, chili powder, paprika, cumin powder and salt and stir. Put the mixture in a food processor and blend into a course mixture.

Take a portion of the mixture in your palms and lightly press together to shape into a round patty. Place the patties on a parchment paper on a baking tray and freeze if you want to use them later. If you are using them straight away, heat 1 tbsp oil in a pan and gently place the patty into the pan.

Cook for 2 minutes on each side or until both sides have browned nicely. Set aside.

To assemble the burger, spread mayonnaise on one half of the toasted bun, top with lettuce, burger patty, grilled halloumi, tomatoes and the other half of the toasted bun. You can add any other toppings if you like.
