
Easy Fish curry
Craving a curry and craving some fish? This Fish Curry recipe is sure to get everyone to the dinner table early! Serve it with your favourite steamed Basmati Rice and enjoy a super tantalising meal.

Ingredients
2 tilapia fish fillets, de-boned
Salt
Juice of one lemon
2 tbsp oil
1 onion, sliced
1 tsp garlic, minced
1 tsp ginger, minced
1 tbsp tomato paste
1/2 tsp turmeric powder
1 tsp paprika
1 cup tomatoes, chopped
1 bay leaf
1 cup water
Coriander leaves, for garnishing
Steamed Daawat Basmati Rice, for serving
Instructions

Add salt and lemon juice on both sides of the fish and set aside.

Heat oil in a pan and add the onions. Cook for 30 seconds or until translucent.

Add ginger and garlic and stir for 20 seconds. Add the tomato paste, turmeric powder and paprika and stir.

Add tomatoes and bay leaf and stir again. Season with salt and add some water. Stir and let simmer for 5-8 minutes.

Remove the bay leaf and gently place the fish fillets over the sauce. Scoop some of the sauce over the fish, cover the pan with a lid and let cook for 10-15 minutes.

Garnish with coriander leaves and serve with some steamed basmati rice.
