Courgette Spinach Pasta Bake
Pasta bakes are great meal ideas that you can prepare in advance for parties or get togethers. This pasta bake is a combination of courgettes and spinach and is just deliciously cheesy.
2 courgettes, julienne
4 tbsp olive oil
4 cloves of garlic, minced
1 tbsp mixed herbs
1 tsp chilli flakes
1 cup spinach, chopped
2 cups canned tomatoes
Freshly ground black pepper
250gms Daawat Big Shell Pasta, cooked
Grated cheddar cheese
Heat oil in a pan. Add garlic, mixed herbs and chilli flakes and toss.
Add in the courgettes and cook for 3 - 5 minutes or until softened.
Add the spinach and once wilted add the tomatoes and season with salt and pepper. Cook for 10 - 15 minutes.
Add the cooked pasta to the sauce and stir. Place the pasta in an oven proof baking dish and top with a layer of cheddar cheese.
Bake in a pre-heated oven at 180c for 20 minutes.
