Cookie Pops

Cookie pops are fantastic for kids birthday parties. My recipe requires only 3 ingredients but makes a super dessert. Drizzle some white chocolate to decorate or dip the pops into some colourful sprinkles to impress the kids.

Ingredients

1 pack NuVita Coconut Cookies
3/4 cup vanilla frosting (buttercream)
Melted dark chocolate

Instructions

Use a food processor to crush the cookies into fine crumbs. Take out in a bowl.

Using a spatula, fold in the cream into the crumbs so as to form a cookie dough like mix.

Use a small ice cream scoop to create equal sized cookie pops. Roll the pops into a ball and gently press down a stick into the center of each cookie pop.

Place in the refrigerator for 10 minutes to firm up. Dip the cookie pops into melted chocolate and place onto parchment paper to firm up.

Once the chocolate has hardened, drizzle white chocolate over it to decorate. If you are not using tempered chocolate, it may not harden itself. Temper your chocolate before using it for coating the cookie pops.
