
How to Cook a Kenyan Style Goat Pilau
The best thing about this Kenyan Style Goat Pilau is the perfect marriage of the tender goat meat with the spiced rice. This dish is a burst of flavour and a whole meal in itself. This dish is known to be best cooked by the women of the Kenyan Coastal region, but it’s so simple to make and I’m sure this will be one of those recipes that will be made very often in your home.

Ingredients
To boil the meat:
500 gms Goat meat, cut into pieces
1 tsp ginger, minced
1 tsp garlic, minced
1 tsp Blue Band Margarine
Salt to taste
For the rest of the dish:
1 tsp Blue Band Margarine
4 tbsp oil
1 tsp cumin seeds
4-5 cardamoms
4-5 cloves
6-8 black pepper corns
1 cinnamon stick
2 bay leaves
4 large onions, sliced
1 tbsp garlic, minced
1 tbsp ginger, minced
1 tsp green chillies, finely chopped
4 potatoes, cut into 2 inch cubes
1 tsp turmeric powder
Salt to taste
1 1/2 cups Daawat Rice, soaked in water for 30 minutes
Coriander leaves, chopped
Instructions

In a pot, add the meat, ginger, garlic, margarine and salt. Add enough water to cover all the meat. Boil for 2-3 hours or pressure cook for 25 mins (5-6 whistles). If the water starts to reduce too much, add more to prevent it from going dry.

Once the meat is tender, use a sieve to separate the meat from the stock. Don't throw away the stock.

In a large pot, heat oil and margarine. Add the cumin seeds, cardamoms, cloves, cinnamon, bay leaves and black pepper corns and toss for 1-2 minutes.

Add the onions and stir. Let these cook for 10 minutes or until golden brown. Make sure you let them cook this long and get them brown. It is also what gives the pilau it's colour and adds a whole different layer of flavour to the dish.

Add the ginger, garlic and green chillies and cook for 1-2 minutes.

Add the potatoes, turmeric powder, boiled meat and salt and stir. Pour in 3 cups of the stock and boil for 15 minutes.

Add the rice and stir. Sprinkle some coriander leaves on top of the stock and let come to a boil. Once it comes to a boil, reduce the heat, cover the pot with a lid and let simmer for 18-20 minutes.

Serve with a side of Kachumbari.
