Coconut & Vegetable Pilau
This cold weather calls for a warm and hearty plate for coconut and vegetable pilau. I love coconut in rice and the coconut in this dish marries with the spices in the rice so beautifully. This has got to be one of my favourite Pilau dishes.
3 tbsp oil
1 tbsp butter
4-5 black peppercorns
2 cinnamon sticks
1 bay leaf
1 tsp cumin seeds
1 large onion, chopped
1 tbsp ginger, minced
1 tbsp garlic, minced
1 tbsp green chillies, finely chopped
2 potatoes, cut into 2 cm pieces
1/2 cup carrots, chopped
1/4 cup peas
1 tbsp coriander-cumin powder
1 tsp turmeric powder
Salt to taste
1 1/2 cups Daawat Basmati Rice, soaked
2 cups coconut milk
1 1/2 cups water
Chopped coriander leaves, for garnishing
Heat oil and butter in a pot. Add the whole spices (cardamom, cloves, cinnamon, bay leaf) and cumin seeds and stir.
Add the chopped onion, ginger, garlic and green chillies stir and then add in the potatoes, carrots, peas, coriander-cumin powder, turmeric powder, salt and stir.
Add the soaked Basmati Rice, coconut milk and water and let simmer for 12-15 minutes.
When cooked fluff up the rice and serve hot.
