Chicken & Rice Pot Pie

Who doesn’t love a filling and flavourful pot pie? This is one dish that I first cooked for my husband, who at that time was just my boyfriend, and my father-in-law. My Chicken & Rice Pot Pie is a combination of chicken and vegetables mixed with a rich and creamy sauce and layered with a pastry that is baked to a nice golden and flaky crust. This version also has rice in it however, feel free to leave out the rice if you’re not keen on a very heavy meal.

Ingredients

2 tbsp oil
1 medium onion, chopped
1 tsp garlic, chopped
1 tbsp dried mixed herbs
700 grams chicken, cubes
3/4 cup leeks, sliced
2 cups mushrooms, roughly chopped
Salt to taste
Freshly ground black pepper
3 tbsp plain flour
2 cups chicken stock
3/4 cup milk
1 cup Daawat Basmati Rice, cooked
Puff pastry, to cover
1 egg + 2 tbsp water (egg wash)

Instructions

Heat oil in a pan and add the onions. Cook for 1-2 minutes or until the onions turn translucent.

Add garlic and mixed herbs and stir. Mix in chicken cubes and cook for 3-4 minutes or until the chicken turns it's colour from pink to white.

Throw in the leeks and mushrooms, season with salt and pepper, and let cook for another 1-2 minutes.

Add the plain flour and stir until incorporated. Add the chicken stock and milk and keep stirring as it comes to a boil. The mixture should thicken straight away.

In a little pot/ oven proof bowl, press down about 2-3 tbsp of cooked rice on the base. Using a ladle, fill the pot with the creamy chicken and vegetables to the top.

Cut a piece of pastry to fit the mouth of the pot, layer the pastry onto the chicken filing and press it down to the sides of the pot. Using a knife, make two slits in pastry in the centre of the pot.

Brush the pastry with egg wash and bake in a preheated oven at 180C for 20-25 minutes or until the pastry is puffed up and golden brown.
