Banana Cake

The best thing about making a banana cake is how simple it is and yet so delicious. This recipe is also perfect to use up those over ripe bananas and what’s even better is the comforting feeling of coming back home after a long day of work to a slice of this moist banana cake and a cup of tea.



2 ripe bananas
1/4 cup maziwa mala
2 eggs
1 tbsp vanilla essence
2 cups Unga wa Dola all purpose flour
3/4 cup caster sugar
1 tsp baking powder
3/4 tsp baking soda
Pinch of salt
1/2 cup margarine


In a small bowl, mash the banana with maziwa mala using a fork. Whisk in the eggs and vanilla essence.
In a large bowl, sift the flour and add caster sugar, baking powder, baking soda and salt and whisk the flour using an electric mixer. This makes the flour very airy.
Add the margarine and beat using the electric mixer. The flour should resemble bread crumbs.
Add the banana mixture and beat again until the batter is smooth and has no lumps. Pour the batter into a greased loaf pan and bake in a preheated oven at 180C for 55-60 minutes.
Cool the cake in the loaf pan for 10 minutes, take it out on a wire rack, cool completely and then slice and serve with a cup of tea or some juice.

      Hello, Maziwa Mala is buttermilk. You can also substitute for yoghurt that has been watered down a little bit.
