Avocado Egg Fried Rice
This hearty and filling plate of egg fried rice topped with avocado will warm you up in this cold weather. It has the perfect bite from the rice, flavouring from the eggs and soy sauce and a beautiful creaminess from the avocado.
4 tbsp oil
1/2 cup spring onions, chopped
1 tbsp dark soy sauce
Salt to taste
Freshly ground black pepper
2 cups Daawat Aromatic Rice, cooked and cooled or left over
Avocado, for serving
Crack the eggs in a bowl and beat. Heat oil in a pan and add the eggs. Use a wooden spoon to stir the eggs into scrambled eggs.
Add the rice, spring onions, soy sauce, salt and pepper and stir well. Let the rice heat through. I like to cook this in a wok sometimes and at high heat which gives it a very nice wok flavour.
Top with chopped avocado and a sprinkle of chili flakes if you'd like and serve.
