Apple Rings Stuffed With Sweet Rice

The idea of apple rings stuffed with sweet rice and coated in a crumble mix came to me while watching cooking videos on Facebook one early morning. The video showed how to make cheese burger bites using onion rings which were then breaded and deep fried. I used a similar concept which led to this delicious dessert which I call the modern sister of an apple crumble.

Ingredients

1 1/2 cups water, boiling
1 tbsp butter (for the rice)
1 tsp cardamom powder
A pinch of orange food colouring
5 tbsp sugar (for the sweet rice)
3/4 cup Daawat Basmati Rice, soaked
2-3 apples
8 tbsp plain flour
5 tbsp sugar (for the crumble/breading)
A pinch of salt
3 tbsp cold butter (for the crumble/breading)
2-3 tbsp sliced almonds
Egg wash (2 eggs whisked with 3 tbsp milk)
2 tbsp oil (for frying)
Vanilla ice cream to serve
Mint leaves to garnish

Instructions

Add butter, cardamom powder, food colouring and sugar for the sweet rice in boiling water. Stir for 1-2 minutes or until the butter has melted.

Stir in the rice and let come to a boil. Reduce the temperature and cover with a lid, then let it simmer for 10-12 minutes.

In the mean time, slice thick slices of the apples and using a round object with a sharp mouth, press down in the centre of the rings to create a hollow ring. Set aside.

For the crumble: In a bowl, combine flour, sugar, sugar and butter using your hands. Rub the mixture between your palms to form what will look like breadcrumbs. Set aside.

Once the rice has cooked, mix in the sliced almonds. Place about 1 1/2 tbsp of the sweet rice in the hollow part of the apple ring and press so the rice sticks to each other and to the apple rings. Continue with the rest of the rings and rice.

Place the rice-apple rings in the freezer for 15-20 minutes to make it harder.

Dip each rice-ring into the egg wash and straight into the crumble mix. Dip it again in the egg wash and into the crumble mix for the second time.

Shallow fry for 1-2 minutes on each side and serve hot with a scoop of ice-cream and garnish with a mint leaf.
