Ugali Omelette

We make the regular omelette all the time, but have you ever thought of making an Ugali omelette that has actual pieces of Ugali in it? This quick dish is perfect for Sunday Brunch and always great to use left over ugali.

We make the regular omelette all the time, but have you ever thought of making an Ugali omelette that has actual pieces of Ugali in it? This quick dish is perfect for Sunday Brunch and always great to use left over ugali.
Ugali-Omelette

Ingredients

1/4 cup left over Ugali
3 eggs
1/2 tomato, chopped
1/4 onion, chopped
Chopped coriander leaves
1 tbsp milk
Salt to taste
Freshly ground black pepper
Butter, for cooking

Instructions

In a bowl, tear into pieces the left over ugali. Add the eggs, tomatoes, onion, coriander leaves, salt, pepper and milk and whisk.

Heat butter in a pan, scoop half of the mixture into the pan and swirl it around. Let cook for 1 1/2 minutes on each side. Fold and serve with toast, sausages and bacon for a full breakfast.
