Super Soft and Fluffy Doughnuts

My home made doughnuts are super soft and fluffy and are so easy to make, i’m sure these will be your go to recipe every single time. Coat them in my super easy sugar glaze topped with crushed NuVita Chocolate Cookies or coat them in some caster sugar, either way you will love them!

Super-Soft-and-Fluffy-Doughnuts

Ingredients

1 1/2 cups warm milk
4 1/2 tsp yeast
10 tbsp sugar
3 eggs
3/4 tsp salt
1/4 cup butter (at room temp.)
2 cups + 3 1/2 cups all purpose flour
Oil, for deep frying
For the glaze:
1 cup icing sugar
3 tbsp milk
NuVita Chocolate Cookies, crushed

Instructions

In a bowl, add warm (warm to the touch) milk, sugar and yeast. Stir and let sit for 10 minutes or until the yeast has frothed up.

Crack the eggs in a large bowl and add salt and butter. Whisk until combined.

Add the yeast mixture and whisk again. Add 2 cups of all purpose flour and mix well until combined.

Add the remaining 3 1/2 cups flour and mix again. Take the dough out on a clean working surface and knead for 5-10 minutes.

Place it in a a greased bowl and cover with cling film. Let sit in a warm place for 2 hours or until doubled in size.

Once doubled, punch it down and knead. Take a handful of dough in your palms and roll into a bowl. Use a rolling pin to flatten it to a thickness of approximately 2 cm.

Use a doughnut cutter (I used a cookie cutter and a piping nozzle to cut the smaller hole) to cut out the doughnuts. Place the doughnut in a tray and repeat with the rest of the dough. Cover with a clean kitchen towel and let rest in a warm place for 30 minutes or until puffed up.

Fry the doughnuts over a medium flame until golden brown. Take them out on a paper towel to drain the excess oil and the coat both sides with caster sugar. If you want to glaze, go to the next step.

For the glaze. whisk together icing sugar and milk. Pour the milk a little at a time since it is very easy to make the glaze very runny. Once you have the right consistency, dip one side of the doughnut into the glaze and immediately dip into crushed chocolate cookies.

Let the glaze dry for 15 minutes and then serve.
