Sukuma Wiki Stuffed Chicken in Coconut Sauce

The name says it all. This recipe is an amazing combination of chicken breasts stuffed with sukuma wiki and spinach that is enhanced in flavour using the new Royco Iron Fortified Beef Cubes and cooked in a rich coconut sauce. I serve mine with mashed potato but it goes really well with some steamed rice or ugali too.

Sukuma-wiki-stuffed-chicken-in-coconut-sauce

Ingredients

1 bunch sukuma wiki
1 bunch spinach
4 tbsp oil
2 onions, sliced
2 tomatoes, chopped
2 Royco Iron Fortified Beef Cubes
3 chicken breasts
4 tbsp oil
Salt to taste
Freshly ground black pepper
1 onion, chopped
1/2 tomato, chopped
1 tsp turmeric powder
3/4 cup coconut milk
1/2 cup water
Coriander leaves, chopped

Instructions

For the sukuma wiki stuffing: Wash the sukuma wiki and spinach leaves and trim the hard long stem. Use a knife to shred the leaves.

Heat oil in a sufuria and add the onions. Cook for 1 minute or until translucent. Add the tomatoes and cook for 2 minutes.

Add the sukuma wiki and spinach leaves and crumble 2 Royco cubes in it. Stir and cook for 3-4 minutes.

Make a slit in the chicken and stuff with the sukuma wiki plus.

Heat oil in a skillet and place the chicken pieces in it. Season with salt and pepper and cook for 3-5 minutes on each side. Take the chicken out on a plate.

In the same skillet, add onions and stir for 1-2 minutes or until translucent.

Add the tomatoes, salt and turmeric powder and stir. Add the coconut milk and water and bring to a boil.

Add the chicken back to the skillet and pour some of the coconut sauce over the chicken to prevent it from drying out. Cook for 15 minutes.

Garnish with coriander leaves and serve with mashed potato, steamed rice, ugali or chapatis.
