Simple Pasta Salad with Vinaigrette
Pasta salads are simple to prepare and just so satisfying to eat after a whole week of heavy meals. They don’t have to be boring though. Add in your favourite vegetables and whip up this classic salad dressing to go with it. Yummy!
Ingredients
2 1/2 cups Daawat Fusilli Pasta, boiled
1 red bell pepper, chopped
1 medium onion, chopped
1 cup canned chick peas, drained
8-10 black olives, sliced into fours
1 medium cucumber, chopped
Handful of coriander leaves, torn
For the Vinaigrette:
1 1/2 cups olive oil
4-5 tbsp vinegar (or rice wine vinegar)
2 tbsp dried mixed herbs
1/4 cup honey
Salt to taste
Freshly ground black pepper
Instructions

Mix together pasta, bell pepper, onions, chick peas, black olives, cucumber and coriander in a bowl.

In a separate bowl, whisk together all the ingredients of the dressing.

Pour over the salad and mix.
If you have any salad dressing left over, just place it in the refrigerator and use it up within 3-4 days.
Looks like something a bachelor can prepare fast. I will, without several of the unknown ingredients, of course. 🙂
Hi Frank, it definitely is a very quick recipe to prepare. All the above ingredients are readily available in most supermarkets, however, if you like, you can substitute for other ingredients that are already in your pantry. Enjoy!
