Rosemary Chicken Curry

There’s a hundred different ways to make a good curry, but every good curry doesn’t need a ton of ingredients. My super simple Rosemary Chicken Curry is a flavour bomb that is sure to become one of your favourites too!

Rosemary-Chicken-Curry

Ingredients

3 tbsp oil
1 large onion, chopped
3 cloves garlic, chopped
3 tbsp tomato paste
1 cup tomatoes, chopped
1 tbsp paprika
1 tsp chili powder
1 tsp turmeric powder
1 tsp cumin powder
Salt to taste
2 sprigs rosemary
1 cup water
2 chicken breasts, cut into 1 inch cubes
Coriander leaves, for garnishing
Steamed Daawat Basmati Rice, for serving

Instructions

Heat oil in a pan and add the onions. Once they turn translucent, add the garlic and stir for 1-2 minutes.

Add the tomato paste and cook it for 2-3 minutes. Add the tomatoes, paprika, chili powder, turmeric powder, cumin powder, salt, rosemary and water and stir. Cover the pot with a lid and let cook for 5-7 minutes or until oil starts to ooze out from the tomatoes.

Add the chicken and stir. Let cook for another 10-15 minutes. Garnish with coriander leaves and serve with a side of steamed Daawat Basmati Rice.
