Soft and fluffy potatoes coated in crushed Salty crackers and then deep fried to form that perfect crust. These potato croquettes are an amazing alternative to potato waffles and so quick to make for breakfast or as a snack.
5-6 cups water, boiling
3 potatoes, cut into equal sized cubes
1 tbsp butter
1 cup cheddar cheese, grated
NuVita Salty Crackers, crushed
Oil, for deep frying
Add potatoes and salt to boiling water and let cook for 15 minutes or until the potatoes are very soft.
Once cooked, drain the water and using a fork or potato ricer mash the potatoes making sure there are no lumps.
Add the egg, cheese and butter and mix well. Season with salt.
Take 1 tbsp of the mixture in your palms and shape it into a classic croquette shape.
Coat with crushed crackers and deep fry 30-40 seconds or until golden brown.
Serve warm with some ketchup.
