Peri Peri Chicken & Spicy Rice

I absolutely love peri peri sauce and this recipe gets as close to the original peri peri sauce as you can get. I marinate chicken breasts in the peri peri sauce and grill it to give it a nice char.

Peri-Peri-Chicken-Spicy-Rice

Ingredients

For the Peri Peri Sauce:
1/2 cup red bell pepper, chopped
1/4 cup onions, chopped
8 cloves garlic
1 tbsp whole red chillies
3 tbsp paprika
1 tsp black pepper, crushed
Salt to taste
1 tbsp oregano
2 tbsp lemon juice
1/4 cup vinegar
1/4 cup olive oil
3/4 cup water
For the rice:
1 1/2 cups Daawat Basmati Rice, soaked
3 cups water
2 tbsp oil
1 large onion, chopped
1 cup red bell pepper, chopped
1 cup tomatoes, crushed
Salt to taste
2-3 tbsp peri peri sauce
Parsley, chopped
Others:
2 tbsp oil
3 chicken breasts, sliced into thin breast slices

Instructions

To make the peri peri sauce: Blend together all the ingredients for the peri peri sauce. Pour it into a pot and cook it for 10 minutes or until the mixture has thickened.

To make the rice: Heat oil in a pot. Add onions and cook for 1-2 minutes or until translucent.

Add the bell peppers and cook for another 1 minute. Add the tomatoes and peri peri sauce and cook for 5 minutes or until oil oozes out of the tomatoes.

Add the rice and water and stir. Let come to a boil then reduce the heat, cover with a lid and cook for 12-15 minutes. Garnish with parsley, fluff and set aside.

Mix the chicken in the left over peri peri sauce and let marinate for 30 minutes. Heat a grill and add oil. Place the chicken breasts on the grill and cook for 3-5 minutes on each side depending on how thick the chicken is.

Serve chicken with spicy rice.
