Paprika Butter Prawn Rice
This paprika butter prawn rice is the perfect combination of prawns cooked in a flavourful paprika butter and tossed in some left over rice. So delicious!
500 gms prawns, cleaned and deveined
1 tbsp butter
2 tbsp olive oil
4 cloves garlic, chopped
1 tbsp paprika
1 tsp chili powder
Salt to taste
Freshly ground black pepper
1 tbsp lemon juice
1/4 cup parsley, chopped
Butterfly the prawns by slicing the prawns lengthwise (don't cut all the way through- watch video for visual instructions).
Heat butter and oil in a pan. Add garlic, chili powder and paprika in a pan. Stir.
Add prawns and cook for 3-5 minutes.
Add salt, pepper, lemon juice and parsley and stir. Stir in the rice and let heat through.
Serve with a garnish of parsley and lemon.
