Kheer (Indian Rice Pudding)

Kheer is an integral part of every Indian’s home. I don’t know why but it is one of those comforting desserts that just bring a smile to my face. My recipe has the perfect balance of sweetness and a bite from the rice and nuts as well as a beautiful aroma from the saffron.

Kheer-Indian-Rice-Pudding

Ingredients

500 ml Daima Whole Milk
1/4 cup Basmati Rice, soaked in water for 30 mins+
1/4 cup sugar
1/2 tsp saffron
1 tsp cardamom powder
1/4 cup almonds, silvered
2 tbsp pistachios, finely chopped
2 tbsp raisins
More pistachio, almonds and saffron for garnishing

Instructions

In a pot, boil the milk. Once it comes to a boil, add the rice and cook for 25-30 minutes. Make sure to stir every 5 minutes and keep an eye on the milk to make sure it doesn't spill over.

Once the rice is cooked well such that you can mash it between your fingers, add the sugar, saffron, cardamom powder, almonds, pistachio and raisins. Cook for 5-10 minutes or until the pudding has thickened.

Serve hot or cold with a garnish of more almonds, pistachio and saffron.
