Home-made Roasted Peanuts (Njugu Karanga)

This style of roasted peanuts is an industry trick that my Mother shared with me. She owns a Food Industry where she produces all sorts of snacks and this is one of her best selling products. Roasting the peanuts in salt makes sure they are evenly roasted, don’t get burnt and get a nice salty layer. These salty roasted peanuts are the perfect companion with a cold glass of beer or whisky on the rocks.

Ingredients

1 kg peanuts
50 grams salt, for the peanuts
200 grams salt, for roasting
3 litres hot water

Instructions

Soak the peanuts in hot water for 5-10 minutes. Place them on a cloth, sprinkle 50 grams salt and rub into the peanuts. Spread them on the cloth and let them dry. This could take a couple of hours or overnight.

In a pot over low heat, add 200 grams salt and add the peanuts about 5-8 handfuls at a time. Keep stirring the peanuts for 15-20 minutes until they are nicely roasted.

Using a large slotted spoon, take the peanuts out making sure to let all the salt fall through the slots.

Let the peanuts cool down and enjoy them as a biting with your evening or late night drink.

    The last time I tried roasting peanuts it was a disaster. Needless to say I was the only one who tried them.
    Will try this recipe and see if anyone else will be brave enough to try them with me.
    Quick one, is it ok if I let them dry overnight with paprika and cayene as a coating?

      Hi Brian, give them a try. They are worth the effort. I’m not too sure about the coatings, maybe you can try a small batch and see first in case they don’t work.
