Home Made Milk Bread Recipe

This incredibly soft and airy milk bread is made using a special technique that involves a “roux” which is the starter. Once you make this at home, you will never be buying bread from the super markets again. This fluffy bread can made into loaves, pull apart buns, burger buns or even mini dinner rolls.

Ingredients

For the starter:
1/2 cup Daima Whole Milk
1/3 cup all purpose flour
Remaining ingredients:
4 cups all purpose flour
1/4 cup sugar (add only 2 tbsp if you don't want your bread sweet)
2 tbsp yeast
4 tbsp margarine
2 eggs, beaten
1/2 cup Daima Whole Milk
Egg wash (1 egg beaten with 1 tsp water)

Instructions

To make the starter: Combine milk and flour and stir over a medium flame until the flour warms up and mixes completely with the milk.

In a bowl, add the flour, sugar and yeast and stir.

Add the margarine and using a fork or your palms, mix in into the flour. The flour will start to resemble breadcrumbs.

Add the eggs, milk and starter and mix. Once the dough comes together, empty it out onto a clean work surface. Using your palms, knead the dough for 10-15 minutes. It is very important to knead the dough well for a soft milk bread. Note: if the dough is too sticky, add some flour until it doesn't feel sticky anymore.

Place the dough in a large bowl, cover with a cling film and let rise in a warm place for 1 hour+ or until it has doubled in size.

Punch down the dough and knead it for 1-2 minutes. Divide the dough into 8 equal parts. You can use a weighing scale to get equal sized buns.

Grease a square baking pan very well. Place the dough into the pan. I placed 4 pieces in one pan. Lightly cover with a cling film and set aside in a warm place to rise for another 30 minutes. The dough will double in size again.

Brush the dough with egg wash and bake in an oven preheated at 180C for 35-40 minutes. Cool completely and serve.
