Githeri

Githeri is one of the main staple foods in Kenya and a personal favourite too. It is such a simple dish made out of beans and maize but so wholesome, comforting and filling. My recipe is a classic githeri with a slight twist. I add peanut butter to give it that nutty taste and it just works so well. Trust me!

Ingredients

3 tbsp oil
1 large onion, chopped
1 cup tomatoes, chopped
1 tbsp Nuteez Crunchy Peanut Butter
1 + 1/4 cup water
500 gms Boiled Beans & Maize
Salt to taste
Chopped coriander leaves

Instructions

Heat oil in a pot and add the onions. Cook until translucent.

Add the tomatoes and cook for 1 minute. Add the peanut butter and 1 cup water and stir. Cook for 4-5 minutes.

Next, add the boiled maize and beans, salt to taste and 1/4 cup water, stir and cover the pot with a lid. Cook for 10-15 minutes.

Garnish with coriander leaves and serve.
