FruitVille Tomato Soup with Cheesy Garlic Bread

Dipping that cheesy garlic bread in a garlicky basil tomato soup is what I could do for lunch every day. Nothing complicated and a super easy recipe.

Ingredients

1 tbsp oil
1 large onion, roughly chopped
6 cloves of garlic
1 litre FruitVille Tomato Juice
Freshly ground black pepper
Basil leaves
Baguette, sliced
1 tbsp butter
2 cloves garlic, minced
1 tsp mixed herbs
Mozzarella Cheese, grated

Instructions

In a pot, heat oil and add the onions and garlic. Toss for 2 minutes.

Add the juice and pepper and let simmer for 20 minutes. Add the basil leaves and simmer for another 5 minutes. Blend using a hand blender. Set aside.

For the garlic bread: make the garlic butter by mixing together butter, garlic and mixed herbs. Lay the sliced baguette flat on a baking tray. Spread a layer of the garlic butter on each slice of the baguette.

Sprinkle the mozzarella cheese on it and then bake in a preheated oven at 180C for 15 minutes or until the cheese has melted.

Serve with a warm cup of tomato soup.
