Crunchy Healthy Breakfast Bars

Running late every morning and don’t have time for breakfast? Crunchy and healthy breakfast bars are our go to option for those rushed mornings. Crunchy cereal and nuts mixed in with a yummy peanut butter mix, and the best part of all, it doesn’t need to be baked either.

Ingredients

1 cup bran flakes
1/2 cup pumpkin seeds
1/2 cup oats
1 packet mini NuVita Oat Digestive Biscuits
1/2 cup honey
1/4 cup peanut butter
3 tbsp butter
1/4 cup dried fruit, I used dried cranberries
1/4 cup chocolate chips

Instructions

Spread the bran flakes, pumpkin seeds and oats on a baking tray and roast in an oven preheated at 180C for 15 minutes.

In a bowl, mix together butter, peanut butter and honey. Microwave for 1 minute and then whisk together until incorporated.

Transfer the contents of the baking tray to a large bowl. Add crushed digestives, dried fruit and chocolate chips. Feel free to add any nuts of your choice at this point.

Pour in the peanut butter mix and stir until coated. In a baking tray lined with parchment paper or aluminium foil, press down the mixture.

Let chill in the refrigerator for 1 hour. Remove and slice into bite sized bars. Store in an air tight container or wrap in parchment paper individually.
