Coconut Sukuma Wiki & Turmeric Rice

Sukuma wiki is one of my favourite greens to eat and it just never gets boring. In this recipe, I elevate the dish by combining another favourite, coconut milk! I serve the coconut sukuma wiki with a very fragrant turmeric rice which turned out to be the perfect match for the creamy greens.

Coconut-Sukuma-Wiki-And-Turmeric-Rice

Ingredients

For the rice:
1 1/2 cups Daawat Basmati Rice, soaked
1 tbsp oil
1 tsp cumin seeds
1 Bay leaf
1/2 tsp turmeric powder
1 stock cube
Chopped coriander leaves
For the coconut sukuma wiki:
2 tbsp oil
1 onion, sliced
1 tsp garlic, minced
1 tomato, chopped
Salt to taste
1/2 bunch sukuma wiki, chopped
2 cups coconut milk

Instructions

For the rice: Heat oil in a pot and add the cumin seeds. Once they have started splattering, add the bay leaf and stir. Add the rice, turmeric powder and stock cube and stir. Add 3 cups of water, stir and cover with a lid. Let simmer for 12-15 minutes and then sprinkle coriander leaves on it. Fluff with a fork and set aside.

For the coconut sukuma wiki: Heat oil in another pot and add the onion and garlic and stir. Add the tomatoes and salt and let simmer for 5 minutes.

Add the sukuma wiki leaves and coconut milk and let cook for 10-12 minutes.

Serve the coconut sukuma wiki with turmeric rice and enjoy.
