Chocolate Chip Cookies & Cream

My easy peasy chocolate chip cookies & cream recipe is a crowd pleaser. I used ready to eat NuVita Chocolate Chip Cookies and made a delicious vanilla butter cream which I used to sandwich two cookies. Feel free to add some melted chocolate into the butter cream to make a chocolate cream or experiment with your favourite flavours.

Ingredients

1 cup butter, unsalted
2 cups icing sugar
2 tbsp milk
1/2 tsp vanilla essence

Instructions

Using an electric mixer, beat the butter for 3-4 minutes or until light and fluffy.

While beating the butter, add the icing sugar, one cup at a time making sure all the sugar is incorporated well into the butter before adding more. Beat for 5-7 minutes.

Add milk and vanilla essence and beat for another 1 minute. Note: Pour 1 tbsp milk at a time and add more if required. If the butter cream is still too thick, feel free to add some more milk to lighten it up.

Layer the chocolate chip cookies with the flat side up. Put the butter cream into a piping bag with a star nozzle and pipe a swirl onto the cookie. Place another cookie so as to create a sandwich and serve.
