The Best Chocolate Cake Recipe

This rich chocolate cake uses my secret ingredients coffee and maziwa mala (buttermilk) and is deliciously moist every single time. I frost my chocolate cake with a quick NuVita Chocolate Coated Flap Jacks buttercream.

Ingredients

For the chocolate cake:
3 large eggs
3/4 cup oil
1 1/2 cups maziwa mala (Buttermilk)
1 1/2 cups strong coffee
1 tsp vanilla extract
3 cups plain flour
2 1/3 cups caster sugar
1/2 cup cocoa powder
1 tbsp baking soda
1 1/2 tsp baking powder
1 tsp salt
For the buttercream:
1 packet NuVita Chocolate Coated Flapjacks, blended
1 cup butter, at room temperature
2 cups icing sugar
3-5 tbsp milk
Chocolate shavings, for topping

Instructions

In a large bowl, whisk together eggs, oil, maziwa mala, strong coffee and vanilla extract and set aside.

In another bowl, whisk together plain flour, caster sugar, cocoa powder, baking soda, baking powder and salt. Pour the wet ingredients into the dry ingredients and whisk until incorporated.

Divide the batter between two greased cake pans and bake in a preheated oven at 175C for 35 minutes or until a toothpick inserted into it comes out clean. Let cool in the pan for 10 minutes and then remove the cakes on a wire rack and cool completely.

For the butter cream, use a hand mixer to beat together blended flapjack cookies and butter. Beat for 3-5 minutes or until light and creamy.

Add 1 cup icing sugar at a time and beat in between. Add milk as required and beat again.

To assemble the cake, place one of the cakes on a tray and layer with the buttercream. Place the second cake over it and cover the top and sides with buttercream. Decorate with chocolate shavings.
