Asian Inspired Pork Rice

This Asian inspired pork rice is great for quick dinners and is so full of flavour. Hearty and delicious! It can also be made using chicken instead of pork or if you are vegetarian, substitute for some soaked soya chunks for that meatiness.

Asian-Inspired-Pork-Rice

Ingredients

3 tbsp oil
300 gms pork, cut into cubes
Salt to taste
Freshly ground black pepper
1 tsp garlic, minced
1 onion, chopped
3 tbsp soy sauce
3/4 cup water
2 carrots, sliced
1/2 cup green peas
2 cups Daawat Aromatic Rice, washed and soaked for 20 mins
4 cups chicken stock
Spring onions, for garnishing

Instructions

Heat oil in a heavy bottomed sauce pan. Add the pork cubes and season with salt and pepper. Sear for 5-8 minutes or until the meat has browned. Make sure not to overcrowd the pan to prevent the meat from steaming as it needs to sear and brown to develop the flavour.

Toss in the onion and garlic and cook for another 1 minute. Add soy sauce and water and stir. Cover with a lid and let simmer for 20-25 minutes or until the liquid has almost completely evaporated.

Add rice, carrots, green peas and chicken stock. Stir and cover with a lid. Let simmer for another 12-15 minutes or until the rice is fully cooked.

Fluff the rice, garnish with spring onions and serve warm.
