African Chicken Curry

This savory, nutty and spicy one pot African chicken curry is my absolute favourite. The juicy chicken thighs marinated in a light spice mixture, cooked with loads of green peppers gives this dish a whole load of flavour to go with a bowl of steamed rice.

African-Chicken-Curry

Ingredients

750 gms skinless chicken thighs
2 tbsp curry powder
2 tbsp paprika powder
4 tbsp oil
1 large onion, sliced
4 cloves garlic, crushed
1 tsp ginger, minced
1 cup potatoes, cut into 3 cm cubes
1 cup green bell peppers, sliced
Salt to taste
2 bay leaves
1 stock cube
1/4 cup oyster sauce
2 tbsp crunchy peanut butter
2 cups water
Parsley, to garnish
Serve with steamed Daawat Basmati Rice

Instructions

In a bowl, mix together chicken thighs, curry powder and paprika and set aside and let marinate for 20 minutes.

Heat oil in a pan and add the onions. Cook for 1 minute or until translucent. Add the ginger and garlic and stir.

Add the chicken in the pan and cook for 10 minutes. Add the potatoes, green bell peppers, salt, bay leaves, stock cube, oyster sauce, crunchy peanut butter and stir.

Add the water and stir. Cover the pot with a lid and let cook for 20 minutes. Garnish with parsley and serve with steamed Daawat Basmati Rice.
